No cocktail is more associated with Cinco de Mayo than the Margarita. There has never been a variation of the good ole classic marg that I haven't loved. Something about a hand crafted cocktail with fresh ingredients is just oh so delish! One of the things that I love about this Cucumber and Jalapeño recipe from Gimme Some Oven is that the base, which is a blended juice mixture, can be poured over ice with sparkling water to create a refreshing mocktail.
· 4 ounces tequila (I used casamigos blanco)
· 2 ounces fresh lime juice
· 1 ounce fresh orange juice
· 1 Tablespoon agave (use more/less to taste)
· 1 cucumber, sliced into thick coins
· 1 small jalapeno, thinly sliced
· optional garnishes: cucumber rounds, jalapeno slices, lime wedges
MOCKTAIL: omit the tequila and replace with sparkling water once strained.
1. Add the tequila, lime juice, agave, orange juice, and cucumber to a blender. Pulse for 1 minute, or until the mixture is smooth.
2. Strain the liquid through a mesh strainer into a cocktail shaker so you are left with only the juice. Discard the pulp.
3. Add the jalepeno slices to a cocktail shaker and muddle until your margarita has your desired level of heat.
4. Shake the mixture for a few seconds and then pour over ice.
5. Garnish with cucumber, lime or jalapeño round.
