Craft cocktails are all the rage lately, but lets be real, they take some serious prep work and we don't all posses the bartending skills to create the same quality of drink many times over for our guests. I was on the hunt for a cocktail that was easy to prep ahead and make in bulk if needed. I discovered this recipe from Boxwood Avenue and decided to give it a go.
I am always an advocate for making cocktail mixers from scratch, but with tropical fruits such as guava and coconut, it can be quite expensive and laborious to purchase, juice and strain. Luckily, Kern's Nectar makes an amazing guava juice that can be purchased as single cans. You can often locate these in the juice aisle of your local grocery store. If you are unable to locate, you can purchase them online at Amazon by the case, or in store at Walmart in a 59 oz. juice container in the fridge section.
Leave it to La Croix Water to always have a flavor available that we need. Their coconut sparkling water sells by the case. If you like coconut, this is great as is over ice. If you don't like coconut, well, this cocktail probably isn't going to be to your liking.
So, how is it made? Keep on scrolling!
3 oz. Kern’s Nectar Guava Juice
3 oz. Coconut La Croix
3 oz. Coconut Vodka (OR) Coconut Rum
½ cup fresh diced pineapple
Juice from 2 limes
Garnish: Lime round and pinepple leaf
Muddle the pineapple in a cocktail shaker with the vodka or rum liquor of your choice and the lime juice until completely muddled. Add the guava juice to the mixture with ice and shake until combined. Pour into 2 glasses and top each glass with 1.5 oz. of the La Croix. Top with crushed ice and garnish.
If you are going to be making more than 2 servings of this cocktail then multiply the amount you need and muddle the pineapple and pre juice the limes. You can either set them aside in your fridge and make once your guests arrive, or you can muddle and combine everything into a large drink dispenser. You won't get the muddled pineapple into the glasses if using a drink dispenser, but all the flavor will be there.
If you choose the route of using a drink dispenser then leave out the alcohol so that everyone has the option of this drink sans booze. Set the Vodka/Rum to the side and allow people to create their own cocktail and choose the alcohol that best fits their liking.
