It has only been three weeks since I was lying beachside in Punta Mita sipping on cocktails at the St. Regis Sea Breeze beach club, and I am having serious with drawls.

The beach club serves up a great Bahia cocktail, which basically is a cucumber mojito. When you think mojito you think sweet and 1 drink tops. This cocktail was the perfect blend of muddled aroma, carbonation and sweetness.
This isn’t the St. Regis recipe, but one of my own that I think you will enjoy. Oh, and those amazing stir sticks are from The Roc Shop.
*Recipe yields 1 cocktail
¼ of a Cucumber, quartered
6 Mint leaves
1 ½ tsp Granulated Sugar
1 Lime, juiced
1 ½ oz. Clear Rum
4 oz (approx) Club Soda
1. In your tall glass muddle the cucumber, mint and sugar. The point of muddling is not to completely mash the ingredients, but rather to release the aromas and flavors into the drink. Gently press down the muddle and give a half turn, repeating 4-6 times.
2. Fill the glass with ice, and then pour in the rum and lime juice. Top off with club soda and garnish with extra mint and a cucumber slice.
